Corn is one of my fav ingredients for cooking; be it makke ki roti, or baby-corn as vegetable, having bhutta in the rains or simply corn-flakes. LOL! I am a big fan of Corn, on the whole. Coming to Makka ke dhokle or makai dhokle, this is probably not a very known recipe, though I have been having it since my childhood. Yummy makai dhokla are quite filling and extremely tasty and ‘good looking’. 🙂
Corn meal or Makke ka ata: 2 cups
Curd: 1/2 cup
Turmeric: 1/2 tsp
Dhania powder/Coriander powder: 1 tsp
Red chilli powder: 1/4 tsp
Ginger-garlic paste: 1 tsp
Ajwain: 2 tsp or more if you like
Sweet corn and Mutter: 1 cup
Soda bicarbonate: 2 pinches
Salt to taste
Preparation Time: 5-8 minutes
Cooking Time: 15-20 minutes in steamer
- In a big bowl, take makke ka ata, curd, turmeric, coriander powder, chilli powder, ginger garlic paste, ajwain, soda. Mix well.
2. Add sweet-corn and mutter to this. You may also crush them gently and then add.
4. Dhoklas are ready! I prefer to have them this way. Alternatively, you may cut them into pieces of 4 and shallow-fry them in oil with a tadka of rai, curry leaves and green chilies. Serve or have then with ketchup or imli (tamarind) chutney.
