Carrot cake is one my favorite tea-time recipes; needless to say kids love it, too. With the goodness of carrots and the amazing cinnamon flavor which make it completely irresistible to keep hands off this preparation, this is an easy recipe to count on. Though it does not really require any icing, you may opt for it if you would like.

Ingredients:
Powdered Sugar: 40 gms
Butter: 25 gms
Condensed Milk: 100 gms
Plain Flour (Maida): 100 gms
Baking Soda: 1/2 Tsp
Baking Powder: 1/2 Tsp
Cinnamon: 1/4th Tsp
Milk: 100 ml
Vanilla Essence: 1/2 Tsp
Carrot: 60 gms
Cashews and Raisins: 20 gms
Baking Time: 30-35 minutes at 180 degrees
Method:
- In a bowl, whisk butter and sugar till the two get mixed well. Add milk, thereafter.
2. In goes the maida, soda and baking powder. Mix well.
3. Add in carrots, cinnamon, raisins and cashews, vanilla essence.
4. Add condensed milk.
5. Grease a cake tin, add the mixture and put it in the preheated oven.
6. The cake’s ready!

Nice recipe.. but i have query to know that is there any other option for condence milk..because i didn’t get it easily…

Thanks Ankita. I understand condensed milk may not be easily available. Great option is to boil 3 cups of milk till it gets 60% reduced.
After reduction, add a cup of sugar and stir till you get the consistency of condensed milk. And there you are, ready to use this sweetened reduced milk for this recipe. I’ll soon upload this recipe as well. Hope you try this, let me know how it turned out. Thanks for writing in! 🙂
